I love overnight oats as a quick and easy breakfast, especially during the summer. This flavor combo is one of my absolute favorites. Don’t sleep on the pistachio nut butter! It is such a delicious addition to so many things like cookies, lattes, muffins, etc. Highly recommend making it a staple in your cabinet, like mine, right next to the cookie butter, Nutella, and peanut better.

Strawberry Pistachio Overnight Oats
Servings: 2
Ingredients
- 1 cup rolled oats
- 1 cup almond milk
- 1/2 cup yogurt
- 1 tablespoon chia seeds
- 1 teaspoon honey
- 1 tablespoon pistachio nut butter
- 1/4 cup diced strawberries
- 2 teaspoon crushed pistachios optional
Instructions
- Mix all ingredients, except the strawberries, in bowl.
- Transfer to (2) serving containers and refrigerate for 4 hours minimum or overnight (optimal).
