Strawberry Chia Overnight Oats

I love the idea of a breakfast that requires zero work in the morning. I also like the idea of a pre-planned, well balanced meal. So, I prepped up some overnight oats and got real excited about putting them in these Oui jars since I have the cool silicone lids.

But, there were a couple of problems with this seemingly well thought out breakfast:

Problem #1: My biggest issue is that the strawberries created a sour, almost “off” flavor. Maybe too much acid for an overnight? 

Fix: Dice the strawberries when prepping, but leave them in their own container until the morning. This does create “work” but I think it’s worth it.

Problem #2: The serving size isn’t quite right, for me. Eating one container left me hungry less than 2 hours later, eating 2 had me almost forcing the last couple of bites. Not so much from fullness, more from the sensory side. 

Fix: Divide into 2 portions and put regular old air tight containers, not as cute, but just as functional!

Strawberry Chia Overnight Oats

Ingredients

  • 1 cup rolled oats
  • 1 cup almond milk
  • 1/2 cup yogurt
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • 1/4 cup strawberries diced

Instructions

  • Mix all ingredients, except the strawberries, in bowl.
  • Place the strawberries in an airtight container.
  • Transfer the oat mixture to 2 serving containers with lids.
  • Refrigerate for 4 hours minimum or overnight.
  • Just before serving top each serving of oats with 2 tablespoons of strawberries.
  • Option to drizzle extra honey and sprinkle additional chia seeds.
