Easy White Beans

I make these white beans to go along with jambalaya. To my husband the combination of jambalaya and white beans is as classic as peanut butter and jelly or grilled cheese and tomato soup. They just go together and make each other better. Because they always go together, I tend to cook the onions, peppers, and garlic from the white beans with the ones from the jambalaya, but take them out before they get to “jambalaya dark” and move them to the white beans pot.

Easy White Beans

Ingredients

  • 1 tbsp oil
  • 1 tsp cajun seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp garlic granulated
  • 1 ham hock, smoked turkey neck, or smoked turkey leg optional
  • 10 oz frozen onion/ 1 medium yellow onion diced
  • 5 oz frozen bell pepper/ 1 medium pepper diced
  • 5 large cloves garlic
  • 2 27 ounce cans Blue Runner Original White Beans

Instructions

  • Heat oil to medium 4 quart pot, add onions and peppers.
  • Allow to cook for 15-25 minutes stirring regularly to brown without burning, use water a few ounces at a time as needed to prevent sticking and burning.
  • Add smoked meat if using, option to add a few ounces of water or broth, stir regularly for an additional 15 minutes.
  • Next, add garlic and seasonings, cook for 5 minutes.
  • Add beans, stir well to incorporate.
  • Add smoked meat if using.
  • Allow to cook for 15-30 additional minutes, up to 1 hour, stirring reuglarly to prevent sticking.
