Heat oil to medium 4 quart pot, add onions and peppers.
Allow to cook for 15-25 minutes stirring regularly to brown without burning, use water a few ounces at a time as needed to prevent sticking and burning.
Add smoked meat if using, option to add a few ounces of water or broth, stir regularly for an additional 15 minutes.
Next, add garlic and seasonings, cook for 5 minutes.
Add beans, stir well to incorporate.
Add smoked meat if using.
Allow to cook for 15-30 additional minutes, up to 1 hour, stirring reuglarly to prevent sticking.
