Pumpkin Spice Granola

I am a big fan of Pumpkin Spice season and so I was very happy to make this fall variation of my original granola. In south Louisiana it is very difficult to get into the fall vibes because it’s still so hot around here. Pumpkin spice lattes and PSL everything else make it a little easier to feel festive. This could be a great addition to a cooling snack like yogurt or chia pudding!

Pumpkin Spice Granola

Ingredients

  • 5 cups oats
  • 1-½ cups chopped pecans
  • 1/4 cup flax meal
  • 6 tbsp butter or coconut oil melted
  • 3/4 cup pure maple syrup
  • ½ cup pumpkin puree
  • 1 tsp pumpkin spice
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • ½ tsp salt
  • 1 cup roasted pepitas
  • 1 cup golden raisins

Instructions

  • Preheat oven to 250°F and place parchment paper or silicone baking mat on sheet pan, spread oats, nuts, and flax meal evenly on sheet, bake for 20 minutes.
  • In large microwave safe bowl melt butter, then add maple syrup, pumpkin, spices, vanilla, and salt, mix well.
  • Add warm toasted oats and stir well to coat evenly.
  • Gently into parchment lined sheet pan all the way to the edges to form a smooth, even layer.
  • Bake for 75 minutes at 250°F (do not overcook!) place on cooling rack, allow to cool completely, then break up and place in airtight container with pepitas and raisins.
