Roasted Cauliflower Hummus

- 1 head cauliflower washed and roughly chopped
- 5 cloves garlic peeled and smashed
- 1/4 cup tahini
- 1/4 cup olive oil extra virgin
- 2 tbsp lemon juice
- 1 tsp salt
- 1 tsp paprika
Preheat oven to 400°F and line a baking sheet with silpat, parchment paper, or spray.
Place cauliflower and garlic on sheet pan, drizzle with oil, salt, and paprika; toss to evenly coat.
Bake for 20-25 minutes until the cauliflower and garlic are fork tender.
Move cauliflower, garlic, and remaining ingredients to food processor; process until smooth, add water as needed to get desired texture.
