Ingredients

  • 2 tbsp oil grapeseed
  • 1 lb smoked sausage chopped
  • 2 lb chicken chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp granlated garlic
  • 2 medium yellow onions diced
  • 1 bell pepper diced
  • 2 tbsp garlic minced
  • 1 tsp cajun seasoning
  • 6 cups broth extra for sticking
  • 1 lb pasta of choice

Instructions

  • In a heavy bottomed pot bring oil to medium high heat.
  • Add sliced sausage, spread evenly across the pot, allow to brown. Stir occasionally to prevent sticking.
  • Meanwhile, season the chicken on both sides with salt, pepper, and garlic.
  • When sausage is browned on both sides use slotted spoon to remove from pot and place in a medium sized bow.
  • Add the chicken to the pot and sear on both sides, about 3 minutes per side.
  • Move chicken to the bowl with the sausage.
  • Add diced onions and peppers to oil, allow to cook, and as the vegetables release water into the pot use this liquid to scrape the bottom of the pot to prevent sticking and scorching. Use additional water if needed.
  • Reduce heat to medium and add garlic and Cajun seasoning, stir to combine.
  • Allow the vegetables to brown and cook down for 30-45 minutes.
  • Add broth and bring to a simmer.
  • Add pasta, stir to combine.
  • Put lid on pot and allow to cook for 20-25 minutes, stir occasionally to prevent sticking.
  • Turn off heat, stir, and replace lid. Allow to sit for 5-10 minutes to allow pasta to be fully cooked.
