Black Bean Dip

- 2 tbsp oil
- 1 onion rough chopped
- 1 bell pepper rough chopped
- 2 cans black beans rinsed and drained
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp cumin
- 2 tsp granulated garlic
- 1/2 cup water or broth
Heat oil on medium high in small pot.
Add onions and peppers cook for 10-15 minutes until golden brown.
Add in seasonings, beans, and the cooking liquid.
Reduce heat to medium low and allow to simmer for 30-45 minutes, stirring occasionally and adding more liquid as needed to prevent sticking and scorching.
Then, use an immersion blender, regular blender, or food processor and pulse the bean mixture until smoth.
Serve immediately with chips or as a side dish topped with cheese.
